If you like to, or want to start eating healthy, it can sometimes be hard because you will most likely be making/cooking a lot more of your own food. It can be hard to find time because a lot of healthy recipes can be pretty time consuming. There is always the meal prep option, but that is still time consuming, it's just all done in one day. A lot of people don't have 5-6 hours, one day a week to be in the kitchen meal prepping. So what's a simple solution for these problems? Finding recipes that can be prepared quickly and easily, and with little clean up. Kate from MY SPIRITUAL ROADTRIP has created a, Ebook cookbook that cuts down on the fuss of healthy eating. Her recipes are simple, healthy and most importantly, delicious. The 39 recipes include, smoothies/drinks, breakfast, mains and desserts. All recipes are vegan, refined sugar-free, and have a gluten-free option. My favourite is the 4 Ingredient Vegan Mac n' Cheese. I have been making this for a few years but without the dijon mustard, and let me tell you, it makes it. I'm a nutritional yeast addict, even still now that I eat real cheese. It's great for littles too, as I make it for Jack and he loves it! I love Kate's simple approach to healthy eating. As it should be!

My Bachelorette at RIO

When it came to my bachelorette party, I wanted to do something different. I live in a small city and there aren't a large array of options for unique, out on the town, party ideas. When I heard that Connie (the owner of RIO yoga studio) offered a bachelorette party package, I was so down. Yoga has been something that I have really fallen in love with in the past year so it was a perfect fit for a special event. 

The night started with a fun (non sweaty) yoga class with my girlfriends. Our teacher Cheilidh, was awesome and made everyone at ease. Cheilidh actually grew up with myself and most of the girls there, which made it even more special. We did some partner yoga which is something that I had never tried before. The champagne was flowing during the class, which made for a more wobbly than usual yoga class. 

After the class, we all enjoyed some take out Thai food on the patio outside. You can have the bachelorette package include food from the vegan restaurant which is in the same building as RIO if you choose. It's called EnVie, and I highly, highly recommend it, but I had Thai on the brain when my Maid of Honour made the plans.  After a yummy meal we headed in to get ready for our night. You can use the studio to get dolled up for your night out (which is when most of the above pictures were taken).

This was a great option for a bachelorette because it allowed some of my friends who had to work in the morning, or who had other obligations, to take part in the yoga and meal part, and go home before the shenanigans begun. Which they did, at a few local bars in the city (as you can see from the last picture above).

Series of Wedding Posts-- The Shower

These past few weeks have flown by but they have been the best weeks of my life. I have been so busy that I've been unable to share any wedding related photos. Now that it's all said and done, I'll be sharing multiple posts with photos from different events over the past few weeks. Jake, Jack and I couldn't be more happy and thank everyone for all of their love and support!

A Green Tea Breakfast Bowl

This is one of my favourite quick and easy breakfasts. It just takes a few minutes in the morning and is a nice change from a smoothie... if you're a big smoothie drinker.

Smash 1-2 ripe bananas in a bowl. This can be done with a fork or a food processor, it depends on personal preference. I personally like to have some banana chunks in mine so I use a fork.

Next, add 2-3 large tablespoons of yogurt (coconut or soy yogurt if you're not a dairy eater). This can be a flavoured yogurt or plain. I love to use a coconut flavoured yogurt. 

Mix in one tablespoon of chai seeds and 1 teaspoon of green tea matcha powder. You can check out a sponsored post I did last year with  Kiss Me Organics on iced green tea lattes. I'm addicted to the stuff!

Once you've made your banana, yogurt and matcha pudding, you can top it with whatever you like! I always add fresh fruit (strawberries and blueberries are a favourite). I also add shredded coconut, flax seeds, hemp hearts and raw cacao nibs. 


  • 1-2 ripe bananas
  • yogurt or dairy free yogurt of your choice (consider coconut flavour!)
  • green tea matcha powder
  • chia seeds 
  • fruit for topping (strawberries, blueberries, raspberries, goji berries, etc.)
  • other toppings (shredded coconut, flax seeds, pumpkin seeds, hemp hearts, raw cacao nibs, nuts, seeds, etc)


What I've Learned About This Life as of my 28th Birthday

Today is my 28th birthday. 

I have learned more about myself this past year than any other year in my life. I have learned to accept myself as I am, I have learned what my mind and body need in order to be the best self I can be. I have learned about my passions for photography, running a small online business, and yoga. I have learned that I am not as patient as I thought and it is something I need to work on. I have learned to control stress better than I ever have before and I've learned to let things go (most of the time). I have learned that it is so much fun to learn and try as many things as you desire, and I've learned that it is okay to give up on things. I have learned that it does not matter what other people think, what matters is only how you feel. I have learned that if the end result of a choice you make is you being happy, then it is always the right choice and everything else will fall into place. I have learned that proper and deep breathing is the answer to any stressful day or situation. I have learned that less is more, and I have learned that enjoying this life one day at a time is the only way to do it.

Welcome to Little Blue Anchor's new website! 

For the last few months I have been feeling the need to change something about my blog. I wasn't feeling very inspired to blog and couldn't quite figure out why. When things in my life get dull I like to give them a facelift or a complete overhaul. In the case of my blog, a completely new host was the answer. Here I can have everything I need in one space... my blog, photography, LBA shop and much more. It makes it easier to manage having everything in one spot. You can still access my old blog from the right hand corner, that way if you need to find an old post such as a recipe, it can be easily accessed. I'm excited about the change and expecting to be more active with posts in this new space!
